A little deep-fried love.....

Pop-Corn Shrimp/Chicken
This yummy shrimp was a huge hit with my family! And the best part is...it's so EASY! We've also substituted chicken for the shrimp, and everyone LOVED it as well! 
Ingredients:
1 lb.  cocktail shrimp/cubed chicken
1 c. flour
3 eggs
4-8 oz. cream cheese
1 T. chives 
1/2 t. chili powder
2 c. panko bread crumbs
1 c. parmesan cheese (grated)
1 t. garlic salt
oil to fry shrimp

Instructions:
Turn on deep fryer
rinse shrimp and make sure shell/tail is removed
mix together eggs, cream cheese, chives, chili powder - set aside mix together panko crumbs, parmesan cheese, garlic salt - set aside
coat shrimp in flour
dunk shrimp in egg mixture, covering thoroughly
roll coated shrimp in crumb/cheese mixture
deep fry shrimp
(you could also try baking the shrimp for a healthier alternative)
*Let the shrimp cool for a few minutes before serving*


and for a little extra love...
Deep-Fried Oreos

 These little devils are to die for! We only make them once in a GREAT while...but they are soooo yummy!

Ingredients:
12 double-stuff oreos (any variety will work)
1 c. instant pancake mix (I use krusteaz)
1/2 - 1 c. water (I like a thinner batter so I use almost 1 c.)
2 T. sugar
powder sugar and chocolate syrup 

Instructions:
mix together pancake mix, water and sugar
coat the oreos in pancake mixture
deep fry oreos
immediately sprinkle with powder sugar
let cool slightly
serve plain or drizzle with chocolate syrup

What's for dinner.....

Pan-Seared Pork Chops

I had just bought a TON of plums and pears, and decided to make this yummy dish...pan-seared pork chops with plum and pear compote and fresh corn on the cob! DELICIOUS!!

INGREDIENTS:
4 center cut pork chops
7-8 medium plums chopped (I used a variety)
2-3 pears chopped
10 dark cherries halved
1/2 C. red cooking wine
4 pieces of corn on the cob
garlic salt
chopped parsley
fresh basil for garnish

INSTRUCTIONS:
season pork chops with salt, pepper, and garlic salt
sear chops in hot pan
add 1/4 C. red wine while cooking to keep moist

combine plums, pears, cherries and 1/4 C. wine in pan
season lightly with garlic salt and parsley
saute until the fruit softens and sauce thickens

Boil the corn with a pinch of sugar
coat with butter and sprinkle with parsley

I also garnished with a bit of gouda cheese...just because we love it :)

**I'm not really the best at instructions and explaining my recipes...
I usually don't use measurements :)  Hope this works out!**

Good Morning Egg Nests!

I was searching for some fun new ideas for breakfast when I came across a recipe for "egg nests." It sounded fun, so I gave it a go...and here is the end product!!
 They were FABULOUS!! Here's the recipe...

INGREDIENTS:
2 eggs
 shredded cheese
salt/pepper to taste

INSTRUCTIONS:
Preheat oven to 350 degrees
2 egg whites (beat until stiff peaks are formed)
(I add a bit of salt to the egg whites...you could also do dill, pepper, etc.)
shredded cheese (fold in to egg whites) I also put some on top!
Spoon egg whites onto a foil-lined baking sheet
Place egg yolk in the middle of "nest"
Bake for 10-15 min. until whites are cooked through and cheese is bubbly.
We ate them with toast as well...we love to "dip." Enjoy!
